- 1/2 lb. butter
- 1 1/4 lb. diced onions
- 1 c. flour
- 1 qt. half and half
- 4 lb. diced potatoes, peeled and cooked, do not overcook
- 1 tsp. salt
- 1 tsp. basil
- 1/2 tsp. black pepper
- 1/2 tsp. Tabasco
- 1/2 gal. chicken stock
Directions

1Melt butter.

2Prepare chicken stock.

3Saute onions in butter until translucent.

4Add flour; mix thoroughly.

5Cook over low heat for 5 minutes.

6Slowly add hot chicken stock, stirring until smooth.

7Add half and half and remaining spices.

8Simmer 10 minutes.

9Add potatoes; stir.
-
10Simmer 10 minutes.

11Garnish with Cheddar cheese, bacon bits and chives.
