- 4 to 5 medium potatoes
- 1 medium onion
- 1/2 tsp. celery seed
- 1/2 tsp. salt
- 4 Tbsp. margarine
- 2 lb. Velveeta cheese
- 1 qt. milk or half and half
Directions

1Peel and slice potatoes into large pot.

2Grate onion very fine and add to pot with celery seed, salt, margarine and water to completely cover potatoes.

3Cook until tender, adding water as necessary to maintain level of broth.

4Mash about half the potatoes and reduce rest to small pieces.

5Cut up cheese into hot potatoes and broth.

6Stir carefully until cheese has melted, then add milk.

7Simmer over low heat until desired consistency.
