Potato Soup

Ingredients

  • 4 to 5 medium potatoes
  • 1 medium onion
  • 1/2 tsp. celery seed
  • 1/2 tsp. salt
  • 4 Tbsp. margarine
  • 2 lb. Velveeta cheese
  • 1 qt. milk or half and half

Directions

    Peel and slice potatoes into large pot.

    Grate onion very fine and add to pot with celery seed, salt, margarine and water to completely cover potatoes.

    Cook until tender, adding water as necessary to maintain level of broth.

    Mash about half the potatoes and reduce rest to small pieces.

    Cut up cheese into hot potatoes and broth.
  6. 6
    Stir carefully until cheese has melted, then add milk.

    Simmer over low heat until desired consistency.
