  • 3 c. minced leeks and onions
  • 4 c. cubed potatoes
  • 4 c. chicken broth
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 Tbsp. salt
  • small amount sour cream (1 to 2 Tbsp.)
  • fresh cooked spinach (optional)

Directions

    Saute leeks and onions in butter.

    Add flour, then potatoes, broth and salt.

    Simmer until potatoes are cooked (may be mashed a little).

    Add sour cream when ready to serve.

    Spinach should be added after soup is done and before sour cream is added.
