- 1 pkg. bacon
- salt
- pepper
- 5 lb. potatoes
- 1 onion
- 1/2 gal. milk
- 1/4 c. flour
Directions

1Peel and cube potatoes; boil until they are almost done. Drain.

2Dice the onion; add to potatoes.

3Remove the majority of fat from the bacon.

4Dispose of fat.

5Fry the bacon.

6Remove the bacon; add to potatoes.

7Using the grease from the bacon, create a roux with the 1/4 cup of flour.

8Add 4 cups of milk.
-
9Allow to thicken.
-
10Pour into potatoes.

11Add remainder of milk, salt and pepper to taste.

12Simmer 30 minutes.
