Potato Soup

Ingredients

  • 1 pkg. bacon
  • salt
  • pepper
  • 5 lb. potatoes
  • 1 onion
  • 1/2 gal. milk
  • 1/4 c. flour

Directions

    Peel and cube potatoes; boil until they are almost done. Drain.

    Dice the onion; add to potatoes.

    Remove the majority of fat from the bacon.

    Dispose of fat.

    Fry the bacon.

    Remove the bacon; add to potatoes.

    Using the grease from the bacon, create a roux with the 1/4 cup of flour.

    Add 4 cups of milk.

    Allow to thicken.

    Pour into potatoes.

    Add remainder of milk, salt and pepper to taste.

    Simmer 30 minutes.
