- 2 c. diced raw potatoes, cooked, then drained
- 1 qt. boiling water
- 1 pt. milk
- 1 large onion
- 4 Tbsp. butter
- 1 to 2 Tbsp. flour
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 Tbsp. chopped parsley
Directions

1Cook potatoes in boiling water.

2Cook onions in milk in microwave or top of double boiler until soft.

3Cook parsley in butter (can also be done in microwave).

4Add flour; stir well. Combine with milk and potatoes.

5Stir until smooth.

6Add salt and pepper.
