  • 5 lb potatoes, cubed
  • 1 lb. bacon
  • 1/2 C veg. oil
  • 1/2 C flour
  • 2 qt. broth
  • 2 bay leaves
  • 4 carrots
  • 2 - C celery, chpd
  • 1 med-lg onion, chpd
  • 1 qt. Half and Half
  • salt
  • pepper
  • grated cheese
  • parsley, chpd

Directions

    Saute bacon & drain

    Add veg. oil to drippings and add flour to make roux

    Add broth & vegetables except potatoes.

    Simmer until veg,. are cooked.

    Add potatoes and simmer until tender
