- FOR THE SOUP:
- 1 Tablespoon Butter
- 1/2 cups Onion, Diced
- 4 whole Large Potatoes, Peeled, Cut Into Bite Size Pieces
- 4 cups Chicken Broth
- 1 Tablespoon Salt To Taste
- 1 Tablespoon Black Pepper To Taste
- 1 cup Non-fat Milk
- FOR THE GARNISHES:
- Greek Yogurt
- Cooked Chopped Bacon
- Shredded Cheddar Cheese
- Sliced Scallions
Directions

1In a large soup pot over medium heat add butter and onions. Saute until onions are slightly softened, about 5 minutes.

2Add potatoes and chicken broth. Bring to a boil, and simmer uncovered until potatoes are fork tender about 20 minutes.

3With an immersion blender, blend potato soup until creamy. Stir in salt, pepper and milk. On low heat simmer for about 10 minutes.

4Add soup to a bowl and top with additional toppings.
