- 3 potatoes (about 3/4 lb.)
- 4 Tbsp. sugar
- about 1 1/2 c. cold water
- 1 cake yeast or 1 pkg. dry dissolved in 1 c. warm water
- 1 1/4 c. boiling water
- 1 1/2 Tbsp. salt
Directions

1Cook potatoes in boiling water.

2Mash in water they were cooked in.

3Add sugar, salt and enough cold water to make 3 1/4 cups of liquid.

4Allow this mixture to become warm.

5Add the yeast dissolved in 1 cup warm water.

6Allow this mixture to stand overnight.

7This should be light and frothy.

8Pour off 1 cup to save as starter for the next baking.

9Store in refrigerator in jar loosely covered.

10When ready for use, set jar in warm water until 82°.

11Starter should remain usable for about a week.

12Work flour in this mixture as in sourdough bread.
