- 5 red potatos - chopped
- 1 red pepper - diced
- 1 onion - diced
- 1 tbsp - salt
- 1 tsp - freshly ground pepper
- 1 tbsp - margerine
- 1/4 cup olive oil
- 1 packages corn bread stuffing
- 1/4 cup freshly cut parsley
Directions

1In a medium pot bring 3 cups water to a boil, add corn bread stuffing, stir and let sit for 5 mins.

2in a mediun sauce pan at high heat, add olive oil, potatoes, red pepper, onion, salt and pepper stir fry for 10 minutes

3preheat oven to 400F, in a medium casserole pan coat with margerine, add vegetables, then top vegetables with corn bread stuffing, sprinkle with parsley and place in oven for 25 minutes or until top is golden brown, take out and let cool for 5 minutes and then serve
