Ingredients

  • 2 dozen small or medium yellow potatoes or red potatoes
  • 2 quart boiling water
  • 4 tbsp olive oil, extra virgin
  • 1 parmesan cheese

Directions

    Boil potatoes in salted water till tender.

    Drain potatoes and place on a couple layers of paper towels.

    Let cool.

    Pre heat oven to 450F

    Use a Tupperware lid and a folded paper towel and flatten potatoes till about a 1/4 in thick.

    Brush with olive oil and salt to taste.

    Brush some olive oil on baking sheet and place potatoes oil side down.

    Repeat on other side.

    Place in 450F oven for 7 to 10 minutes until they start to brown.

    Flip potatoes and cook for 7 to 10 more minutes.

    At the end add parmesan cheese or any kind of cheese you like.

    Remove from baking sheet and place on a dish.

    You can add any type of cheese and extras like bacon and sour cream.
