- 2 dozen small or medium yellow potatoes or red potatoes
- 2 quart boiling water
- 4 tbsp olive oil, extra virgin
- 1 parmesan cheese
Directions

1Boil potatoes in salted water till tender.

2Drain potatoes and place on a couple layers of paper towels.

3Let cool.

4Pre heat oven to 450F

5Use a Tupperware lid and a folded paper towel and flatten potatoes till about a 1/4 in thick.

6Brush with olive oil and salt to taste.

7Brush some olive oil on baking sheet and place potatoes oil side down.

8Repeat on other side.

9Place in 450F oven for 7 to 10 minutes until they start to brown.

10Flip potatoes and cook for 7 to 10 more minutes.

11At the end add parmesan cheese or any kind of cheese you like.

12Remove from baking sheet and place on a dish.

13You can add any type of cheese and extras like bacon and sour cream.
