- 4 large baking potatoes
- 12 cup butter, melted
- 23 cup half-and-half
- 34 cup parmesan cheese
- 1 tablespoon fresh parsley, chopped
Directions

1Scrub potatoes and pat dry.

2Prick each potato several times with a fork.

3Arrange potatoes on a baking sheet; bake at 400F for 1 hour or until done.

4Let cool slightly.

5Slice each potato in half lengthwise; carefully scoop out pulp, leaving shells intact.

6Mash pulp; add butter and half and half and stir well.

7Add 1/2 cup of Parmesan cheese and stir until smooth.

8Stuff shells with potato mixture and place on a baking sheet.

9Sprinkle potatoes evenly with remaining 1/4 cup cheese.

10Broil 3 inches from the heat for 3 minutes or until lightly browned.

11Sprinkle with parsley.
