  • 1/3 c. butter or margarine
  • 3 Tbsp. all purpose flour
  • 2 c. milk
  • 8 oz. shredded Mexican cheese blend
  • 2 oz. jar diced pimento, drained
  • 1 4/5 can chopped green chiles, drained
  • 2 Tbsp. chopped & pickled jalapeno pepper
  • 1/2 tsp. salt
  • 2 lb. baking potatoes, peeled and thinly sliced

    Melt butter, add flour whisk until smooth.

    Add milk and cook until thickened.

    Add pimento, green chiles, jalapeno pepper and salt.

    Place half of potato slices in 2 qt. greased baking dish.

    Top with w/half of cheese mixture. Repeat layers.

    Bake, covered at 350 degrees for 20 minutes. Uncover and bake 40 minutes.

    Sprinkle with 1 1/2 c. cheese.
