- 1/3 c. butter or margarine
- 3 Tbsp. all purpose flour
- 2 c. milk
- 8 oz. shredded Mexican cheese blend
- 2 oz. jar diced pimento, drained
- 1 4/5 can chopped green chiles, drained
- 2 Tbsp. chopped & pickled jalapeno pepper
- 1/2 tsp. salt
- 2 lb. baking potatoes, peeled and thinly sliced

1Melt butter, add flour whisk until smooth.

2Add milk and cook until thickened.

5Add pimento, green chiles, jalapeno pepper and salt.

6Place half of potato slices in 2 qt. greased baking dish.

7Top with w/half of cheese mixture. Repeat layers.

8Bake, covered at 350 degrees for 20 minutes. Uncover and bake 40 minutes.

9Sprinkle with 1 1/2 c. cheese.

10Bake 5 minutes.
