- 6 medium potatoes
- 2 c. shredded Cheddar cheese
- 6 Tbsp. butter
- 1 c. sour cream
- 3 green onions, minced
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Boil the potatoes in skins.

2Cool, peel and shred on coarse grater.

3Combine cheese and 4 tablespoons butter in saucepan. Heat and stir until cheese is almost melted.

4Remove from heat and blend in sour cream, onions, salt and pepper.

5Fold in potatoes. Dot with 2 tablespoons butter.

6Cover and bake at 300° for 25 minutes.
