- 2 lb. potatoes (about 6 medium)
- 2 Tbsp. butter
- 1 medium onion, minced
- 1/4 c. bread crumbs
- 1/4 c. shredded sharp Cheddar cheese
- 2 eggs, slightly beaten
- 1 c. sour cream
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1Scrub potatoes and cook in boiling, salted water.

2Drain, then peel and slice into a 2-quart baking dish.

3Melt butter in a skillet.

4Add onion and brown slightly.

5Add onion, bread crumbs and cheese to potatoes.

6Beat eggs and stir into sour cream.

7Add salt and pepper.

8Pour over potatoes.

9Bake at 350° for 15 to 20 minutes until well heated and slightly brown.

10Makes 6 servings.
