- 2 tablespoons vegetable oil
- 2 tablespoons butter
- 12 cup onion, peeled and chopped
- 12 cup ham, diced
- 1 (24 ounce) package frozen hash browns, thawed and drained
- 12 teaspoon salt (or to taste)
- 12 teaspoon pepper
Directions

1Heat oil and butter in a large skillet; add onion and ham.

2Saute two minutes; put potatoes on top of mixture, making a large pancake.

3Season and cover.

4Cook slowly until golden on bottom.

5To turn, slide pancake onto a large plate.

6Add more oil and butter to skillet if needed.

7Invert pancake into skillet and cook until golden, about 15 minutes.

8To serve, cut into pie-shaped wedges.
