  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 12 cup onion, peeled and chopped
  • 12 cup ham, diced
  • 1 (24 ounce) package frozen hash browns, thawed and drained
  • 12 teaspoon salt (or to taste)
  • 12 teaspoon pepper

Directions

    Heat oil and butter in a large skillet; add onion and ham.

    Saute two minutes; put potatoes on top of mixture, making a large pancake.

    Season and cover.

    Cook slowly until golden on bottom.

    To turn, slide pancake onto a large plate.

    Add more oil and butter to skillet if needed.

    Invert pancake into skillet and cook until golden, about 15 minutes.

    To serve, cut into pie-shaped wedges.
