  • 2 12 lbs red potatoes
  • 13 cup finely chopped fresh parsley
  • 1 small onion
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 14 teaspoon pepper
  • 1 -2 garlic clove
  • 12 cup white wine vinegar
  • 23 cup olive oil

Directions

    Steam potatoes; let stand 10 minutes.

    With skin on cut into small pieces.

    Add parsley and onions.

    Blend together remaining ingredients and pour over warm potatoes.
