- 13 cup finely chopped fresh parsley
- 1 small onion
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 14 teaspoon pepper
- 1 -2 garlic clove
- 12 cup white wine vinegar
- 23 cup olive oil
Directions

1Steam potatoes; let stand 10 minutes.

2With skin on cut into small pieces.

4Blend together remaining ingredients and pour over warm potatoes.
