- 34 lb butter
- 3 cups sugar
- 6 eggs
- 3 12 cups all-purpose flour
- 34 teaspoon baking powder
- 1 pinch salt
- 34 cup milk
- 1 teaspoon vanilla
- 1 teaspoon lemon juice (optional)
- 3 tablespoons Dutch-processed cocoa powder (optional)
Directions

1In work bowl of stand mixer, cream butter and sugar until there is no granularity left and butter is light and fluffy.

2Add eggs, one at a time, beating well after each addition.

3Sift flour, baking powder and salt 3 times.

4Alternate adding flour and milk to butter, starting and ending with dry ingredients.

5Add vanilla and lemon juice, if using.

6Pour into a greased and floured loaf pan.

7To make marble cake, pour 2/3 of the batter into a greased and floured loaf pan.

8Add cocoa powder to the remaining batter and mix until fully blended.

9Pour over batter in loaf pan and swirl briefly with a butter knife.

10Put into a cold oven and turn temperature up to 350F Bake 1 hr 15 minute Cool in pan 10 minutes, then remove and leave on a cooling rack until fully cooled.
