  • 3 c. all-purpose flour
  • 1/2 tsp. soda
  • 1/2 tsp. double-acting baking powder
  • 3/4 tsp. salt
  • 1 c. shortening or butter
  • 2 c. sugar
  • 4 eggs
  • 1 tsp. vanilla
  • 1 tsp. lemon extract or grated lemon rind

    Have shortening or butter at room temperature. Line a 9 x 5 x 3-inch loaf pan with paper and grease. Sift flour once before measuring. Preheat oven to 350°. Sift together flour, soda and salt. Put shortening, sugar, eggs, vanilla and lemon extract or rind in large bowl. Beat 2 1/2 minutes on high speed and add flour mixture alternately with buttermilk. Scrape bowl while beating. Beat only enough to blend well (about 2 1/2 minutes). Pour batter into prepared pan. Bake about 1 hour and 10 minutes. Turn out of pan and remove paper.
