Ingredients
- 2 lb. pork roast, boned, cubed and fat removed
- 2 lb. chicken, cut up
- 3 qt. water
- 2 large onions, chopped
- 2 cloves garlic, crushed
- 2 or more Tbsp. chili powder
- 1 bunch fresh parsley, chopped
- 1 or 2 cans chopped chillies
- 1 (1 lb.) can chopped tomatoes
- 1 1/2 Tbsp. sugar
- 2 (1 lb.) cans white hominy
- salt and pepper to taste
Directions

1Put the first 10 ingredients in a large kettle; bring to a boil.

2Turn heat to low; simmer gently, covered, for at least 1 hour, or until pork and chicken are tender.

3Add hominy; cook 15 minutes longer.

4Garnish with avocado slices, chopped green onions, grated Monterey Jack cheese or tortilla chips.
