Ingredients

  • 2 lb. pork roast, boned, cubed and fat removed
  • 2 lb. chicken, cut up
  • 3 qt. water
  • 2 large onions, chopped
  • 2 cloves garlic, crushed
  • 2 or more Tbsp. chili powder
  • 1 bunch fresh parsley, chopped
  • 1 or 2 cans chopped chillies
  • 1 (1 lb.) can chopped tomatoes
  • 1 1/2 Tbsp. sugar
  • 2 (1 lb.) cans white hominy
  • salt and pepper to taste

Directions

    Put the first 10 ingredients in a large kettle; bring to a boil.

    Turn heat to low; simmer gently, covered, for at least 1 hour, or until pork and chicken are tender.

    Add hominy; cook 15 minutes longer.

    Garnish with avocado slices, chopped green onions, grated Monterey Jack cheese or tortilla chips.
