- 1 tablespoon olive oil
- 1 lb pork loin or 1 lb pork shoulder, trimmed and cubed
- 1 cup onion, chopped
- 3 garlic cloves, minced
- 2 (15 1/2 ounce) cans white hominy, drained
- 3 cups red chili sauce
- 1 1/2 cups chicken broth
- GARNISH
- 1 white onion, chopped
- 1 bunch radish, sliced
- 2 lemons, wedged
- 1 bunch cilantro, chopped
Directions

1Heat oil in a 4 qt dutch oven over medium high heat.

2Add pork, cook until browned.

3Add onion, and garlic; cook until translucent.

4Add remaining ingredients, bring to a boil. Reduce heat; simmer covered 30 minutes.

5Remove cover and simmer an additional 30 minutes.

6Prepare garnish during the last 30 minutes and serve.
