Ingredients

  • 1 tablespoon olive oil
  • 1 lb pork loin or 1 lb pork shoulder, trimmed and cubed
  • 1 cup onion, chopped
  • 3 garlic cloves, minced
  • 2 (15 1/2 ounce) cans white hominy, drained
  • 3 cups red chili sauce
  • 1 1/2 cups chicken broth
  • GARNISH
  • 1 white onion, chopped
  • 1 bunch radish, sliced
  • 2 lemons, wedged
  • 1 bunch cilantro, chopped

Directions

    Heat oil in a 4 qt dutch oven over medium high heat.

    Add pork, cook until browned.

    Add onion, and garlic; cook until translucent.

    Add remaining ingredients, bring to a boil. Reduce heat; simmer covered 30 minutes.

    Remove cover and simmer an additional 30 minutes.

    Prepare garnish during the last 30 minutes and serve.
