Praline-Yam Casserole

  • 4 medium yams
  • 1/2 c. brown sugar, divided
  • 1/2 tsp. salt
  • 1/4 c. melted oleo
  • 2 eggs
  • 2 Tbsp. melted oleo
  • 1/2 c. pecan halves

Directions

    Cook yams in microwave or on stove until tender.

    Peel and mash in a large bowl.

    Beat in eggs, 1/4 cup of the brown sugar, 2 tablespoons oleo and salt.

    Spoon mixture into a 1-quart buttered casserole.

    Arrange pecan halves over top.

    Sprinkle with remaining brown sugar and drizzle the 1/4 cup melted oleo on top. Bake, uncovered, at 375° for 20 minutes.
