  • 500 g raw prawns, shelled and chopped
  • 1 stalk celery, finely chopped
  • 1 small onion, finely chopped
  • 2 tablespoons coriander leaves, finely chopped or 2 tablespoons parsley
  • 1 tablespoon cornstarch, 2 tablespoons if using food processor (cornflour)
  • 1 tablespoon sherry wine or 1 tablespoon rice wine vinegar
  • 1/2 teaspoon salt
  • 1 egg

    Preheat deep fryer to hot.

    Mix all ingredients together thoroughly.

    With wet hands, form into small balls.

    Deep fry until golden brown.
