Ingredients

  • 34 cup butter
  • 1 cup sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 14 teaspoon baking powder
  • 12 teaspoon vanilla extract
  • 1 (12 ounce) jar preserves, seedless works best
  • 1 13 cups shredded coconut (optional)
  • 12 cup chopped walnuts (optional)

Directions

    In a large bowl, cream butter and sugar.

    Add egg - mix well.

    In seperate bowl, combine flour and baking powder.

    Gradually add to butter mixture.

    Add coconut, walnuts and vanilla extract, mix thoroughly.

    Press two-thirds of dough into greased 13in x 9in x2in baking pan.

    Spread with preserves; crumble remaining dough over preserves.

    Bake 350 for 30 - 35 minutees or until golden brown.

    Cool in pan.

    Yield 36 bars.
