Ingredients

  • 1 medium chicken (about 5 lb.)
  • 1 qt. hot broth
  • 1 c. cracker crumbs
  • 1 Tbsp. butter
  • salt and pepper

Directions

    Boil chicken until very tender.

    Remove bones and cut meat very fine.

    Season with salt and pepper to taste.

    To hot broth add crackers and butter.

    Add chicken and mix well.

    Add a bit more broth if needed.

    Put in a loaf pan; press with weight and let cool.

    Slice and serve.
