Pressure Cooker Chicken

  • 6 chicken breasts, skin removed
  • 1 c. chicken broth
  • 1/2 c. chopped celery leaves
  • 1/2 c. chopped onion
  • 2 Tbsp. oil
  • 1/2 tsp. salt
  • 1 can cream of chicken soup
  • 1 - 4 oz can sliced mushrooms, drained
  • 1/2 tsp. paprika

    Heat oil in pressure cooker over medium high heat.

    Sear chicken pieces a few at a time to seal in juices.

    Remove from cooker.

    Pour off excess oil and return chicken to pot.

    Stir slightly to blend cream soup and broth and add it to pot, together with onion, celery, mushrooms and sprinkle salt and paprika over it.

    Cover and pressure cook it for 8 minutes after weight starts rocking gently.

    Quick, cool it under cold water.

    Remove lid when pressure button has dropped.

    Remove chicken to separate dish. Blend 2 Tbsp. flour with 1/4 c. water, and slowly stir flour mixture into liquid still in pot over medium heat to make gravy. Serve gravy over chicken.
