  • 1 large egg
  • 1/2 tsp. salt
  • 1 tsp. Dijon mustard
  • 1 Tbsp. red wine vinegar (or vinegar of choice)
  • 1 1/2 c. oil
  • 1 1/2 Tbsp. sour cream
  • 1/4 c. crumbled blue cheese
  • 1 Tbsp. chopped fresh parsley
  • 2 to 3 Tbsp. heavy cream

Directions

    Follow directions for making the processor thousand island dressing through the emulsion stage.

    Add the sour cream, Blue cheese, parsley and heavy cream.

    Pulse just to blend.

    Chill. Makes about 2 cups.
