  • 1 French baguette
  • 4 tsp. olive oil
  • 1 medium yellow onion, sliced
  • 1/2 tsp. dried rosemary
  • 1/2 tsp. dried thyme
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 (14 1/2 oz.) can tomatoes, drained and chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, sliced
  • 8 pitted black olives, chopped
  • 4 anchovies, drained and chopped (optional)
  • 2 Tbsp. Parmesan cheese

Directions

    Cut bread lengthwise; then cut crosswise 4 times, making 8 pieces.

    Toast under broiler for about 1 or 2 minutes, until golden.
