Ingredients

  • 3 eggs, beaten well
  • 1 c. Wesson canola oil
  • 1 1/2 c. sugar
  • 1 c. buttermilk in which 1 1/2 tsp. soda is dissolved
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. allspice
  • 1 tsp. vanilla
  • 2 c. plain flour
  • 1 c. cooked prunes, chopped and cooled
  • 1 c. chopped English walnuts

Directions

    Mix and beat together the eggs.

    Add Wesson canola oil, sugar, buttermilk and soda mixture, cinnamon, nutmeg, allspice, vanilla, flour, prunes and English walnuts.

    Pour into a well greased and lightly floured Bundt pan.

    Bake at 300° for 48 minutes. Let set in pan for 10 minutes and then turn out.
