Prune Cake

Ingredients

  • 2 c. sifted flour
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 1 1/2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. nutmeg
  • 1 tsp. allspice
  • 1/2 c. soft shortening
  • 3 unbeaten eggs
  • 1 1/2 c. sugar
  • 1 c. cooked, pitted drained and diced prunes
  • 1 c. buttermilk

Directions

    Sift together the first 7 ingredients and set aside.

    Put into a large bowl and blend the next 3 ingredients.

    Add prunes.

    Add alternately the buttermilk and the above flour mixture.

    Bake in 2 (9-inch) layer pans at 350° for 35 minutes or until cake springs back when punched.

    When cool, cut each layer in two with dental floss, making 4 layers and spread with the following mixture.
