Ingredients
- 2 c. water
- 1 c. snipped pitted dried prunes
- 1 c. sugar
- 1/4 c. shortening
- 1 egg
- 1 c. buttermilk
- 2 c. all-purpose flour
- 1 c. whole-wheat flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. baking powder
Directions

1In small saucepan, combine water and snipped prunes; bring to boil.

2Cover and simmer 3 minutes.

3Drain reserving 1/3 cup liquid. Set aside.

4Cream together sugar and shortening until fluffy; beat in egg.

5Combine buttermilk and reserved prune liquid.

6Stir together thoroughly all-purpose flour, whole wheat flour, baking soda, salt and baking powder.

7Add to creamed mixture alternating with buttermilk mixture.

8Fold in cooked prunes.

9Bake in two 7 1/2 x 3 1/2 x 2-inch loaf pans (greased).

10Bake at 350° about 1 hour. Cool 10 minutes in pans; remove to wire racks.
