Prune Nut Bread

Ingredients

  • 1 heaping c. chopped prunes
  • 1/2 tsp. finely shredded orange peel (optional)
  • 1 c. orange juice
  • 2 c. all-purpose flour
  • 3/4 c. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 heaping tsp. cinnamon
  • 2 beaten eggs
  • 2 Tbsp. salad oil
  • 3/4 c. chopped walnuts

Directions

    Combine prunes, orange peel and juice; let stand 1/2 hour. Sift together dry ingredients.

    Combine eggs, oil and prune mixture; add to dry ingredients, mixing well.

    Add nuts.

    Turn into oiled 9 x 5 x 3-inch loaf pan or use 2 aluminum ring molds. Bake at 350° for 55 minutes in loaf pan, a little less in ring molds.

    Remove from pan; cool.
