Ingredients
- 1 cup dried prune, chopped
- 1 teaspoon grated orange rind
- 1 cup orange juice
- 1/2 cup whole wheat flour
- 1 1/2 cups white flour
- 3/4 cup white sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 large eggs, beaten
- 2 tablespoons canola oil
- 1 cup pecans, chopped
Directions

1Combine the prunes, orange rind, and orange juice in a large mixing bowl and stir gently.

2Let stand about 30 minutes.

3Combine dry ingredients in a different bowl.

4Add eggs and oil to the prune mixture and stir well.

5Add dry ingredients and stir until blended.

6Stir in pecans.

7Pour into a greased 9x5x3-inch loaf pan.

8Bake at 350 degrees for 55-60 minutes, or until a toothpick inserted in the center comes out clean.

9Cool in the pan 10-15 minutes.

10Remove from pan and cool on a wire rack.
