Psole (Hominy Stew)

Ingredients

  • 1 can hominy (No. 2 1/2)
  • 2 c. water
  • 1 tsp. salt
  • 1 small onion (whole)
  • 2 lb. pork or chicken, cut in small chunks
  • 3 tsp. ground chili or 2 large red pods
  • 1 tsp. ground oregano
  • 1/4 tsp. garlic powder
  • 1 tsp. saffron (asafran)
  • 1 can chopped green chillies

Directions

    Cook the meat until done.

    Add the hominy and all other ingredients, except the oregano and the saffron.

    Simmer about two hours.

    Add the oregano and the saffron and let simmer 15 minutes. Serve on dry toast with a side dish of cottage cheese.
