- 1 tablespoon butter or margarine
- 2 pounds apples
- 3 tablespoons sugar
- 1 teaspoon vanilla extract
- 18 teaspoon cinnamon ground
- 1 cup milk
- 2 large eggs
- 2 each egg whites
- 1/4 teaspoon salt
- 1 cup flour, all-purpose
Directions

1Heat oven to 425 degrees F.

2Melt butter in large ovenproof skillet.

3Add apples, 2 tbsp sugar; cook, stirring, 15 to 20 minutes, until apples are tender and liquid has evaporated.

4Stir in vanilla and cinnamon.

5Remove from heat.

6Beat together milk, eggs, egg whites, remaining 1 tablespoon sugar and salt in bowl.

7Gradually whisk in flour until well blended and smooth.

8Pour batter over hot apples.

9Bake in 450F (230C).

10oven 20 minutes.

11Reduce heat to 350F (180C); bake 10 to 15 minutes, until puffed and browned.

12Sprinkle with sugar.

13Cut in wedges.
