  • 10 cups reduced-sodium chicken broth
  • 3/4 cup finely chopped celery
  • 1 cup finely chopped carrots
  • 1/2 cup finely chopped celeriac
  • 0.500 kilos skinless boneless chicken thigh
  • 1/4 cup water
  • 3/4 cup onion finely chopped
  • 3/4 teaspoon thyme
  • 1/4 teaspoon sea salt

Directions

    Let the chicken broth simmer in a pot for 5 minutes, during that time cut the chicken into pieces about 2cm by 2cm and place them in the pot with sea salt and water then let simmer for 1 hour (covered). After that skim fat from the top and add celeriac, carrots, water, onion and thyme then let simmer for 45 minutes (covered).
