- 2 eggs
- 1/2 c. all-purpose flour
- 1/2 c. milk
- 2 Tbsp. margarine or butter
- 4 c. drained fruit cocktail
- 1/2 c. firmly packed brown sugar
- 8 oz. carton dairy sour cream
Directions

1Preheat oven to 425°.

2In bowl, beat eggs slightly.

3Add flour and milk to eggs, beating with mixer until combined.

4Melt 1 tablespoon butter in each of 2 (9-inch) glass pie pans.

5Bake at 425° for 10 to 15 minutes or until golden brown.

6Pancakes will form a well in the center and edges will puff up.

7Spoon fruit into center of pancakes.

8Sprinkle with brown sugar and top with sour cream.
