- 1 c. sugar
- 3/4 c. light corn syrup
- 1/2 c. water
- 1/2 tsp. salt
- 2 Tbsp. butter
- 1 tsp. peppermint extract
- food color
Directions

1Butter sides of heavy 2-quart pan.

2Mix sugar, syrup, water and salt.

3Add butter; cook over medium heat until it boils and sugar dissolves (stir constantly).

4Attach candy thermometer. Cook to 248°, no stirring.

5Remove from heat.

6Stir in extract and coloring.

7Pour into buttered 8 x 8 x 2-inch pan.

8Cool.

9With buttered hands, roll into ball.

10Return to pan.

11When cold, wrap in plastic wrap.

12Store up to 2 weeks at room temperature.
