  • 4- 1/2 pounds Pork Loin Roast, Fat Trimmed
  • 1/4 cups Brown Sugar
  • 2 teaspoons Ground Chili Powder
  • 1 teaspoon Ground Cumin
  • 1- 1/2 teaspoon Salt
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 12 ounces, fluid Coke Zero
  • 10 ounces, weight Enchilada Sauce

Directions

    Cut any visible fat from the pork loin.

    In a small bowl, mix together dry ingredients and rub all over pork loin.

    Set pork in the insert of your crockpot.

    In a bowl, mix together Coke Zero and enchilada sauce.

    Pour over pork.

    Place lid on top of insert.

    Cook on low for 8 to 10 hours or until fork tender.

    Shred meat with 2 forks and allow it to sit in the juices until ready to serve.
