  • 3 lb. cubed beef
  • 3 Tbsp. tapioca
  • 1/2 c. bread crumbs
  • 1 bunch carrots, quartered
  • 1 bunch celery (2-inch) pieces
  • 8 to 10 small onions
  • 1 (No. 2) can tomatoes
  • salt and pepper
  • 1 c. red wine

Directions

    Place in a casserole or roaster by order listed, except the wine, which is added last hour of baking.

    Cover tightly and place in 250° oven for 2 hours.

    Open and stir well from the bottom. Return to oven and bake 5 hours total.

    Add the red wine during the last hour of baking.
