  • 1 Tablespoon Margarine
  • 1 Tablespoon Minced Garlic
  • 3/4 cups Canned Pumpkin
  • 1 pinch Freshly Grated Nutmeg
  • 1-1/2 cup Heavy Whipping Cream
  • 3/4 cups Freshly Grated Parmesan Cheese
  • 1/2 teaspoons Salt
  • 1 pinch Pepper
  • 16 ounces, weight Box Fettuccini Pasta, Cooked

Directions

    Melt the margarine on medium heat and saute the garlic until soft. Stir in the pumpkin and grate a little nutmeg into the pot. Stir for 1-2 minutes.

    Stir in the whipping cream and bring to a low simmer. Stir frequently, letting thicken for 5-6 minutes.

    Stir in the Parmesan cheese and stir frequently until desired thickness. Season with salt and pepper.

    Serve with cooked fettuccini.
