- 3 tablespoons raisins
- 2 tart apples, peeled and shredded
- 1 cup shredded pumpkin
- 2 teaspoons lemon juice
- salt and pepper to taste
Directions

1Place the raisins in a small dish and cover with hot water. Allow to stand for 30 minutes.

2Once the raisins are plump, drain and place into a mixing bowl with the apple and pumpkin. Pour in the lemon juice and toss to coat. Season to taste with salt and pepper, and serve immediately.
