- 1 c. shortening
- 1 tsp. vanilla
- 2 c. brown sugar
- 2 eggs, lightly beaten
- 1 c. canned pumpkin
- 2 c. flour
- 1/4 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. allspice
- 1 c. flaked coconut
- 1 c. chopped nuts
Directions

1Preheat oven to 350°.

2Grease jelly roll pan.

3Cream shortening and vanilla.

4Add sugar; cream until light and fluffy. Add eggs and pumpkin; beat well.

5Sift flour, baking powder, baking soda and spices.

6Stir into pumpkin mixture, mixing until smooth.

7Blend in coconut and nuts.

8Spread batter in pan; bake for about 35 minutes.

9Cool; cut into bars.

10Makes 32 bars.
