- 4 eggs
- 2 c. sugar
- 1/2 c. vegetable oil
- 1 (16 oz.) can pumpkin
- 1 (6 oz.) container 100% plain yogurt
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1/2 c. raisins or chopped nuts
Directions

1Preheat oven to 350°.

2Grease jelly roll pan, 15 1/2 x 10 1/2 x 1-inch.

3Beat eggs, sugar, oil, pumpkin and yogurt in a large bowl on medium speed 30 seconds.

4Beat in flour, baking powder, cinnamon, baking soda and salt on low speed 30 seconds. Stir in raisins or nuts.

5Pour batter into pan.

6Bake 30 minutes.

7Cool. Cut into 2 x 1 1/2-inch bars.

8Store in refrigerator.
