Pumpkin Bread

Ingredients

  • 1 c. oil
  • 4 eggs
  • 3 1/2 c. flour
  • 2 tsp. salt
  • 3 c. sugar
  • 1 tsp. each: cloves, pumpkin spice, nutmeg and ginger
  • 2 tsp. cinnamon
  • 2 tsp. soda
  • 1 tsp. baking powder
  • 1 c. pecans, chopped
  • 3 c. fresh cooked pumpkin or 1 large can pumpkin

    Combine sugar and oil; mix.

    Add eggs and pumpkin; beat on high to break up pumpkin.

    Add dry ingredients that have been sifted 2 times all at once, then add nuts.

    Pour into well-greased and floured Bundt pan (pan will be almost full; make cupcakes with leftovers).

    Bake at 350° for 1 hour and 10 minutes.

    Cake will be moist but not sticky on inserted stick.
