  • 1 (16 oz.) can pumpkin
  • 4 eggs
  • 3 c. sugar
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 3 1/2 c. flour
  • 1 tsp. vanilla
  • 2 tsp. baking soda
  • 1 c. oil
  • 2/3 c. water
  • 3/4 c. nuts, chopped

Directions

    To start, mix 1 1/2 cups flour with the oil and set aside. Mix ingredients in order. Add the flour and oil at the very end. Add chopped nuts. Bake at 350° for 1 hour or more.

    Makes 3 small loaf pans or 8 tin cans.

    When baking with cans, cut baking time down.
