  • 1 c. sugar
  • 1/2 c. brown sugar
  • 1 c. cooked or canned pumpkin
  • 1/2 c. salad oil
  • 2 eggs
  • 2 c. flour
  • 1/2 tsp. each: nutmeg, salt and cinnamon
  • 1/4 tsp. ginger
  • 1 tsp. baking soda
  • 1/4 c. water
  • 1 c. raisins and 1/2 c. nuts (optional)

Directions

    Combine sugars, pumpkin, oil and eggs.

    Add flour and spices gradually to sugar mixture.

    Stir in water and add raisins and nuts.

    Pour into well-greased and floured loaf pan.

    Bake at 350° for 65 to 75 minutes.
