- 1 1/2 c. all-purpose flour
- 1/2 tsp. salt
- 1 c. sugar
- 1 tsp. baking soda
- 1 c. pumpkin puree
- 1/2 c. vegetable oil
- 2 eggs, beaten
- 1/4 tsp. nutmeg
- 1/4 tsp. cinnamon
- 1/4 tsp. allspice
- Dash of mace
- 1/2 c. chopped nuts
- 1/2 c. raisins
Directions

1Preheat oven to 350°.

2Sift together the flour, salt, sugar, and baking soda.

3Mix the pumpkin, oil, eggs, 1/4 cup water and the spices together, then combine with the dry ingredients; do not mix too thoroughly.

4Stir in the nuts.

5Pour into a well-buttered 9-inch by 5-inch by 3-inch loaf pan.

6Bake 50 to 60 minutes until a toothpick comes out clean.

7Turn out of pan and cool on a rack. Makes 1 loaf.
