- 3 c. sugar
- 3 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 4 tsp. ginger
- 1 1/2 tsp. salt
- 1 c. vegetable oil
- 1/2 c. water
- 2 c. pumpkin
- 4 eggs
- 1 c. chopped nuts
Directions

1Measure and mix all dry ingredients except nuts in a large bowl.

2In a second bowl, mix all liquid ingredients and thoroughly blend with mixer.

3Add dry ingredients in small portions at a time.

4Add nuts.

5Pour in 2 (1 pound) coffee cans, greased, or 2 (1 pound) loaf pans.

6Bake at 325° for 1 1/2 hours.

7Cool and serve.
