  • 2/3 c. oil
  • 2 2/3 c. sugar
  • 4 eggs
  • 1 (16 oz.) can pumpkin
  • 2/3 c. water
  • 3 1/3 c. self-rising flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1 c. nuts, chopped
  • 1 c. raisins
  • 1 c. coconut

Directions

    Mix oil and sugar in a large bowl.

    Add eggs, pumpkin and water.

    Blend in flour, salt, soda, baking powder and spices. Stir in nuts, raisins and coconut.

    Grease sides and bottoms of 4 (1 pound) coffee cans well.

    Line bottoms of cans with wax paper. Pour mixture into cans.

    Bake at 350° for 1 hour and 20 minutes. Cool slightly and loosen sides of loaves from can.

    Remove and cool completely before slicing.

    To store, wrap and refrigerate no longer than 10 days or freeze until ready to use.
