Ingredients

  • 1 can pumpkin (2 c., 1 pie size)
  • 1 2/3 c. water
  • 1 c. honey
  • 4 eggs or 8 egg whites
  • 3 1/2 c. whole wheat flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 c. chopped walnuts

    With electric mixer, blend water and honey.

    Add eggs; mix well.

    Stir in pumpkin.

    In another bowl, combine dry ingredients. Stir dry ingredients into pumpkin mixture.

    Stir in walnuts. Pour batter into 2 greased loaf pans.

    Bake in preheated 350° oven for 1 hour, or until toothpick inserted comes out clean.

    Cool on wire rack for 10 minutes.

    Remove from pan; cool completely. Yields 2 loaves.
