Ingredients
- 1 can pumpkin (2 c., 1 pie size)
- 1 2/3 c. water
- 1 c. honey
- 4 eggs or 8 egg whites
- 3 1/2 c. whole wheat flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1 c. chopped walnuts
Directions

1With electric mixer, blend water and honey.

2Add eggs; mix well.

3Stir in pumpkin.

4In another bowl, combine dry ingredients. Stir dry ingredients into pumpkin mixture.

5Stir in walnuts. Pour batter into 2 greased loaf pans.

6Bake in preheated 350° oven for 1 hour, or until toothpick inserted comes out clean.

7Cool on wire rack for 10 minutes.

8Remove from pan; cool completely. Yields 2 loaves.
